If your plant lost all its digital systems for 48 hours, could you still produce safely?

A question I would value the forum's honest view on. Most of our food safety controls now depend on digital systems, temperature monitoring, process control, traceability, automated record-keeping. But what actually happens to food safety if those systems go down for a day or two, whether from a cyber incident, a ransomware lockout, or even a major IT failure? A few things I am curious about: Does your HACCP or food safety plan account for extended loss of digital systems? Do you keep any manual or paper fallback for critical records (CCPs, temperatures, traceability)? Have you ever had to run "manual mode" in a real situation, and what did you learn? For transparency, I am with CSAFI, a non-profit focused on cyber resilience in the food industry. Frequency of Training Needs

Hi , Hi , is there any specific requirement or rule regarding the frequency of refresher training for Food Safety Team Member? Would i be acceptable to conduct the refresher training ince every 3 years, or is a shorter interval required?

cracking big batches of eggs

I’m looking for guidance on handling cracked eggs in a restaurant setting. We’re considering cracking multiple shell eggs in advance, pooling them in a food-grade squeeze bottle, keeping the bottle refrigerated during breakfast service, and discarding any remaining egg at the end of service. I’d like to know whether this is considered an acceptable food-safety practice, and if there are any specific standards or regulations that address pooled raw eggs, holding time, temperature limits, or the use of squeeze bottles for this purpose. If anyone has direct references from FDA, Codex, SFDA, or other restaurant-specific food-safety standards, I’d really appreciate it.
